About Gerard's Paella

Gerard Nebesky

Armed with giant paella pans, buckets of ocean fresh seafood, baskets of farm fresh vegetables, Gerard travels the country to create superb culinary events for clients. Add heaping portions of Gerard's personal charm and energy and you have the recipe for a truly memorable food experience.

A longtime chef and restaurant owner, Gerard’s culinary career was profoundly influenced when he was introduced to the joys of classic Spanish Paella while skiing in Spain. Once he mastered the art of cooking this dish to perfection, he founded this company and took his passion on the road. Gerard loves to introduce others to Spain's most famous dish, Paella. His talents have been rewarded many times, most notably when he won Bobby Flay’s challenge to a paella throwdown. (Food Networks show Throwdown with Bobby Flay, season 5, episode 4).

Chris Hataway

Chris is an artist by training, declares that cooking is an art form and he should know. A graduate from the San Francisco Art Institute, he tackles his cooking like he does his art; with passion and dedication. Chris describes paella as a palette of flavorful, rich and colorful ingredients.

By working the kitchen lines in many restaurants, Chris honed his cooking skills in the trenches. His cooking career started on the line in Gerard’s first restaurant, The Bohemian Café, in Occidental. He has also worked at the Willow Wood Market Café and the Underwood Bar and Bistro, both in Graton, CA.

When Chris is not wearing his chef’s jacket, he and his wife can be found at their Forestville, CA frame shop, Frame of Mind. His artwork can be seen at Buddhas’ Palm in Sebastapol, CA or on his website

 Anna and Gerard,
I cannot tell you what a hit you were at our Welcome Party at Black Stallion Winery. Everyone raved about your food all through the weekend. You are sure to have 200 new customers! The paella was wonderful, the presentation impressive and I've never seen my friends eat so much! The tapas display was gorgeous and delicious. Many many thanks for all your help in making it a success.
Fondly, Janell

I can't think how anyone would consider anything other than your wonderful paella for an event in an outdoor setting. While many of us have savored good paellas, yours is in a class by itself. (I had leftovers for the next two days with great pleasure!) Thank you for making us look so good in our hosts role, everyone felt very special and haven't stopped praising the paella and it's stunning presentation. (Who would think that this was once just simple food for hard-working people). I know how difficult it must be to handle and time everything involved to make it all work so well. Congratulations and thanks again for a wonderful experience.
Best wishes, Carlos (Chairman and CEO of Corona)

 Dear Gerard,
Knowing that you've received rave reviews from countless others, I'm passing along this one I heard at the reception:

'I've been to dozens of weddings, and can't remember what food was served, but I'll never forget this paella and how entertaining it was to watch it being prepared'

Thank you for all you did for my son and daughter-in-law on their big day.
Best regards, Leonard
